These Cranberry-Orange Muffins are delicious and pretty!
2 1/2 cups of flour
1/2 teaspoon of salt
2 1/2 teaspoons of baking powder
1/4 teaspoon of baking soda
3/4 cup cup of sugar
1 cup of sour cream
1/2 cup of butter (melted)
1 teaspoon of pure vanilla
Zest of 1 large orange
Fresh squeezed juice from 1 large orange
2 eggs, beaten
2 cups of cranberries (fresh is best!)
Preheat oven to 400 F.
In a mixing bowl, whisk together the dry ingredients (flour, salt, baking power, baking soda, and sugar) then, make a well in the center.
In a separate bowl combine the sour cream, melted butter, vanilla, orange zest and juice, and eggs. Stir until blended. Then, pour your wet mixture into your dry mixture and fold with spatula until well combined.
Add the cranberries to the mix and very gently fold into the mixture.
Scoop the mixture evenly into a 12-well non-stick muffin pan and bake for 15 to 20 minutes.
For the glaze, whisk together 1/2 cup of powdered sugar and the juice of half of an orange and drizzle on your cooled muffins!
