Chicken Apple Sausage Skillet

It’s Wednesday, and I don’t know about you but I am TIRED as heck. It’s been a long week and dinner tonight needs to be easy, but still clean. Here’s our Wednesday night, delicious, filling, clean, dinner for you!

Chicken Apple Sausage Skillet

Wednesday Night Dinner!

This is one of those recipes where, it’s a little bit of this, a little bit of that, and a whole lot of YUM! Here we go:

Ingredients:

  • 2 Chicken Apple Sausage Links (I prefer the Applegate brand. I typically do not eat pork, only on special occasion, and some Chicken Apple Sausage brands come in a pork casing…so make sure to read the full ingredient list if you don’t eat pork!)

    • Cut into 1/2 inch thick rounds

  • 1/4 of a white onion chopped into medium sized squares

  • 1/2 of a green pepper chopped into medium sized squares

  • 1/2 of a red pepper chopped into medium sized squares

  • 6 to 7 asparagus stalks chopped into about 1 inch pieces

  • 3 small to medium sized red potatoes chopped into squares

  • 2 tablespoons of olive oil or avocado oil

  • Salt and pepper to taste

  • A pinch of paprika

  • A dash of garlic powder

Directions:

  • It’s easy people. Heat 1 tablespoon of olive or avocado oil in large skillet over medium-high heat

  • Add in Chicken Apple Sausage rounds and cook until slightly browned

  • Combine all veggies in a large bowl, add in 1 tablespoon of olive oil and all spices and mix it up real good

  • Add veggies into skillet with Chicken Apple Sausage and saute on medium-high heat for 7 to 9 minutes

  • Reduce heat and cover for 5 to 10 minutes, or until veggies are tender
