Quiche is delicious. But, it’s even better mini style! Personalize the fillings to please your whole crew!
One pie crust (store bought, sorry y’all)
Salt and Pepper to taste
Fillings: This is really up to you, but I used the following: spinach, tomato, green onion, shredded cheddar cheese, bell peppers, and Applegate Breakfast Sausage
Grab your 12-cup muffin tin and flip it upside down. That’s right.
Form pie crust around the base of six of the individual cups
Bake pie crust as directed
Once baked, let rest for 20 minutes
While resting, whisk together eggs, salt, and pepper
Once mini pie crusts have cooled, flip the muffin tin to the correct side and place mini pie crusts into individual muffin tins
Poor egg mixture into each pie crust, about half way
Now, it’s time to get creative: mix and match all your favorite fillings into the egg mixtures
Bake at 375 degrees F for about 20 minutes or until egg mixture is cooked through (poke a little toothpick to check on the done-ness!)
