Clean Eats, Summer Edition: Chili Lime Grilled Chicken + Mango Salsa

This recipe screams summer! The flavors are so delicious together and I love sneaking my pupper, Thatcher, slices of mango. (:

Chili Lime Grilled Chicken + Mango Salsa

Ingredients:

  • 2 fresh boneless skinless chicken breasts, butterflied, and tenderized to about 1/2 to 1/4 inch thick

  • 4 teaspoons of Trader Joe’s Chili Lime Seasoning or a table spoon of lime juice mixed with 1/2 teaspoon of red pepper chili flakes

  • 1 whole fresh mango, chopped into small squares

  • 1/4 of a red pepper, finely chopped

  • 1/8 of an avocado, chopped into small squares

  • The juice of half of a fresh lime

  • 3 teaspoons of fresh chopped jalapeno (or less if you don’t like it too spicy)

  • 2 teaspoons of finely chopped cilantro

  • 1 teaspoon of finely chopped red onion

Directions:

  • Butterfly the chicken breasts so you have 4 cutlets and tenderize until the chicken is about 1/2 to a 1/4 inch thick

  • Season each chicken breast with one teaspoon of Trader Joe’s Chili Lime Seasoning or fresh lime juice and red pepper chili flakes

  • Grill until chicken breasts are cooked through, about 15 to 20 minutes

  • For the salsa, literally so easy: finely chop mango, avocado, jalapeno, cilantro, red onion, red pepper and the lime juice and stir it all up!

  • Plate the chicken with the salsa on top and some fresh avocado slices on the side

  • EASY AND SO FLAVORFUL
