Clean Eats, Summer Edition: Spinach, Berry + Chicken Apple Sausage Salad

Spinach, Berry, + Chicken Apple Sausage Salad

It’s Monday, so I thought I would start with a very simple, easy, and delicious recipe! But before we get started, people often ask me “what is clean eating?” Clean eating to me is eating foods/ingredients that are of the earth and have not been pumped up with unnatural items like preservatives, GMOs, chemicals, etc. Clean eating to me is also buying products that come from companies with integrity and ethical and sustainable practices. I know that’s a lot to worry about when purchasing food, but imagine if the majority of us did that? We would see less sickness, less animal abuse, and overall healthier bodies and a healthier planet. Here we go!

I have posted his salad a million times on Instagram but I’ve never shared the whole recipe. I can’t take full credit for this one—Jill, whom I had the pleasure of living with in D.C., while in college, made this for dinner during the summer and I remembered thinking, at the time, “I cannot wait to be married. I’m going to make this all the time.” It’s that good! Ha!

This the OG way I make the salad. One of the reasons I love this salad is that the flavors blend so well together and you have the opportunity to mix it with “add-ins” get creative and try new flavors. Here are some of my favorite ways to mix it up: adding, feta cheese, goat cheese crumbles, lemon juice, avocado, blue cheese crumbles, crushed roasted pecans , just to name a few. I hope you enjoy! Ingredients:

  • Chicken + Apple Sausage - 2 Links

  • Fresh Baby Spinach Leaves - 5 oz.

  • Fresh Sliced Strawberries - 7 to 8 medium sized strawberries

  • Fresh Blueberries - 1/4 cup

  • Sliced Almonds - 1/4 cup

  • Extra Virgin Olive Oil - half a tablespoon for cooking the Chicken Sausage, and then to taste for the dressing

Directions:

  • Cook your Chicken + Apple Sausages as directed

  • Slice the cooked sausages slightly diagonally so you have little sausage rounds

  • Heat the olive oil in a medium size pan and place the sausage rounds in the pan and let cook on one side until slightly browned, about 2 minutes

  • Flip the rounds and let them brown on the opposite side

  • Set the sausage rounds aside on a plate and let cool while you prep the remainder of the salad

  • Wash your spinach, strawberries, and blueberries

  • Thinly slice your strawberries

  • In a large bowl, place your spinach at the bottom,

If you don’t have Applegate at your local grocery, there are a number of other brands that make Chicken and Apple Sausage: Walmart has their own brand as well as aidells and al fresco which can be found at most grocery stores. But, be sure to read the ingredients! Some brands of Chicken Sausage use a pork casing—which if you eat pork, then you’re good to go! If not, be sure to read the labels—Applegate is casein free, which means there is no casing.

I dress mine with just a drizzle of extra virgin olive oil. My husband likes balsamic vinaigrette. We also enjoy it with raspberry vinaigrette and red wine vinaigrette.
